Mexican Casserole

This mexican casserole is easy to throw together for a quick weeknight meal.

Ingredients
  

  • 2 LB Ground Beef
  • 1 Can of Rotel
  • 1 Can of Cream of Chicken or Cream of Mushroom Soup
  • 1 Can of Ranch Style Beans
  • 1 Package of Yellow Corn Tortillas
  • 1 8 oz Package of Shredded Fiesta Blend Cheese

Instructions
 

  • Brown the ground beef and drain.
  • Add the Rotel, Ranch Style beans and soup to the meat and mix well. Continue to heat up until mixture is hot. Remove from heat.
  • Place a layer of corn tortillas on the bottom of a 13x9 inch pan. You may need to tear them to place them in a way to ensure the bottom of the pan is covered.
  • Place some of the meat mixture on top of the tortillas, being sure to cover all tortillas with some of the meat. Use about half of the meat.
  • Lightly sprinkle some of the cheese over this layer.
  • Add another layer of corn tortillas, tearing if needed to fit.
  • Add another layer of the meat mixture.
  • Sprinkle another layer of cheese lightly and evenly over the top.
  • At this point, you can put this in the oven or you can add another layer of corn tortillas and cover it with cheese. Note if you do decide to do another layer of tortillas on the top, ensure they are completely covered with shredded cheese.
  • Cook in the oven at 350℉ for about 30 minutes or until the cheese is melted and tortillas are soft.

Notes

You can serve this with chips and salsa on the side, or even have sour cream or guacamole on the side.  Do what works best for your family.
