Mexican Casserole

My family and I just love “Mexican” cuisine or what a lot of us refer to as Tex-Mex.  Note that we also love authentic Mexican food, but any variation of it is always enjoyed by my family. Tacos, enchiladas, quesadillas, chimichangas, and even menudo!  When my friend shared this recipe for “Mexican Casserole” on her Facebook page, I just knew I had to try it out.  To make sure I give the proper place credit, she shared the recipe from another page called Easy DIY Recipes.

This recipe reminds me of a recipe that I’ve been making for a long time called Chicken Dorito Casserole because of the use of the cream of chicken soup and rotel. However, it’s main ingredients are much different and I don’t put beans in the Chicken Dorito Casserole.  I also haven’t made the Chicken Dorito Casserole in a very long time because it’s just not healthy, so I was happy to try out this recipe.  Note that the original recipe calls for different measurements and a different way of layering.  I found that with 1 LB of ground beef, it was hard to layer a 13×9 inch dish.  So next time I tried this recipe I used 2LB and that worked much better.  We even had leftovers for the family to take in lunches the next day!

Mexican Casserole

This mexican casserole is easy to throw together for a quick weeknight meal.

Ingredients
  

  • 2 LB Ground Beef
  • 1 Can of Rotel
  • 1 Can of Cream of Chicken or Cream of Mushroom Soup
  • 1 Can of Ranch Style Beans
  • 1 Package of Yellow Corn Tortillas
  • 1 8 oz Package of Shredded Fiesta Blend Cheese

Instructions
 

  • Brown the ground beef and drain.
  • Add the Rotel, Ranch Style beans and soup to the meat and mix well. Continue to heat up until mixture is hot. Remove from heat.
  • Place a layer of corn tortillas on the bottom of a 13x9 inch pan. You may need to tear them to place them in a way to ensure the bottom of the pan is covered.
  • Place some of the meat mixture on top of the tortillas, being sure to cover all tortillas with some of the meat. Use about half of the meat.
  • Lightly sprinkle some of the cheese over this layer.
  • Add another layer of corn tortillas, tearing if needed to fit.
  • Add another layer of the meat mixture.
  • Sprinkle another layer of cheese lightly and evenly over the top.
  • At this point, you can put this in the oven or you can add another layer of corn tortillas and cover it with cheese. Note if you do decide to do another layer of tortillas on the top, ensure they are completely covered with shredded cheese.
  • Cook in the oven at 350℉ for about 30 minutes or until the cheese is melted and tortillas are soft.

Notes

You can serve this with chips and salsa on the side, or even have sour cream or guacamole on the side.  Do what works best for your family.

Family Adventures in Broken Bow: A Memorable Getaway

Living in Northeast Texas allows us to explore neighboring states without long drives. I decided to plan a getaway to Broken Bow, Oklahoma, because it’s conveniently close to us. Let me tell you, this trip quickly became a cherished memory for us. We were bubbling with excitement as we packed our bags, eager to escape the confines of our daily routine and immerse ourselves in the natural beauty and delightful experiences that Broken Bow offers.

In this blog post, I’ll take you along on our journey, sharing all the places we discovered and the cozy cabin we called home during our stay in Broken Bow. It’s a tale of adventure, relaxation, and family bonding that I’m thrilled to recount. So, buckle up, and let’s dive into the captivating world of our Broken Bow escapade.

Getting Ready for Our Broken Bow Adventure

Once I had our location selected and our dates picked out, it was time to try and find a place to stay. I wanted to be close to town but also have some privacy. I prefer to avoid staying in overcrowded areas or sites with cabins stacked next to each other, like apartment buildings. My favorite service for this is VRBO, but I also looked around on local sites using Google to search “cabins in Broken Bow, OK.” I found a lovely place, which I will share later on, and chose the length of our stay.

What you take with you will largely depend on where you stay. Every location has its different amenities and supplies. The cabin I decided to book had everything we needed other than food and, of course, our clothes and personal belongings. I highly recommend taking food with you or finding a local Walmart or discount store to stop at rather than shopping at the grocery store in Broken Bow. The prices are high because it is a tourist location and it’s easy for visitors to get to. If you are going during the summer, make sure that you take your swimming clothes with you if you plan on going swimming.

Remember to adapt these suggestions to your family’s needs. If you plan on camping rather than renting a cabin, then make sure you create a separate list of the camping supplies you need. I decided to get a cabin rather than camping because that worked best for us. Also, check the weather forecast before you leave to know what type of clothes you need to take to be prepared.

Our Daily Adventures in McCurtain County

We didn’t have many plans when we left, except for knowing that we wanted to go kayaking and horseback riding.  Below is a summary of the different activities that we did participate in.

Kayaking in Broken Bow

There are so many different options for kayaking trips in Broken Bow. We wanted to take an advanced kayaking trip through the frigid water. I tried to find a decent kayaking trip for all of us to go on and it was fun, but it was a lot shorter than we expected. Keep in mind that you can relax and move slowly down the river, but my kids were trying to race each other to the end while I was making sure no one got hurt.

I used Beavers Bend River floats, which is excellent for beginners. They had friendly service, and once you get to the end of the kayaking trip, they load you up and give you a ride back to the beginning. I would love to take that same trip again without racing to the end and just relax and enjoy the time.

Horseback Riding Trail and the Train Depot

Beavers Bend State Park offers many different activities to keep you busy. I was the most excited about horseback riding and the train ride through the forest. You will be able to see plenty of deer through the woods because the workers sprinkle deer corn near the tracks so that they will come around to eat it.

I assume that the deer are just used to the people and the sound of the train riding through the forest at this point. There is also a very entertaining person speaking over the intercom throughout your ride, which makes it even more enjoyable. There is always a line of people waiting to hop on the train and enjoy the ride.

The horseback riding and train are in the same area, next to a gift shop and concessions. This allows you to grab a snack while waiting for your departure or appointment to hop on a horse. The staff are all very friendly and help you get on the horse, even short people like me with minimal experience. Don’t be afraid to get on a horse and enjoy the trail ride.

The horses are trained and very gentle. They are used to people and well taken care of by the staff. My horse stopped abruptly during my ride, and I didn’t understand why as I was facing forward. One of the staff came back and asked me if everything was okay. I replied that the horse had stopped and I didn’t know why. It just so happened that my horse stopped for a bathroom break! We managed to catch up very quickly as the horse I was riding had a little extra speed in it’s step. They are trained to stay together, and the staff ensures everyone is safe.

The Wood Museum (Forest Heritage Center)

There is also a museum in Beavers Bend State Park that you can visit that is mainly dedicated to wood and Wood Art, as they are famous for this. I would have liked to take more time to listen to the education as we walked through, but the kids were in a hurry to run around and right back out. I guess I’m just more of a history nerd than everyone else.

If you also like history and learning about things, please take the time to walk through and enjoy it. There are speaker boxes, reading material, beautiful wood sculptures, and other wood art.

Janet’s Treasure Chest

While waiting for a callback about a boat ride, I decided to visit one of the most famous souvenir shops in the area, Janet’s Treasure Chest. Outside the shop, you will find large sculptures with which you can pose for photos.

Inside, you will find that there is a large amount of different items to look at. There is everything from historical objects to candy and toys and even more. They have a little something for everyone. This is a great place to window shop or pass the time while waiting to travel to your next location. They tend to be busy here, so be patient and mindful of others.

Taking a Boat Ride

I finally received a callback from someone about taking a ride on their boat. Another popular service there is Tiki boat tours, but they are pretty crowded, and I don’t like big crowds. There are several different services and people offering boat rentals or boat rides for a price. I found a more affordable tour with some fantastic people called B-Pops ride and dive boat tours. They even offer you to go fishing or swimming and are some of the nicest people I met while in Hochatown. I still have their card from the trip, and you can reach them at 580-236-5158.

Where to Stay Near Broken Bow

I have mentioned where I would like to stay, but I have yet to say where we did stay. The cabin we stayed at was outside the tourist area, down some backroads in a more private location. They may have been building another cabin nearby while we were there, but this didn’t bother us. The crew was respectful, and we weren’t bothered by any noise. I didn’t want to share this cabin because I wish I could be greedy and keep it to myself. This place was absolutely amazing.

There are three bedrooms, two bathrooms, a vast living area, a beautiful kitchen and laundry room, a back porch with a hot tub, an outdoor space and fire pit, and so much more. We loved this cabin so much that during some of our trip, we were perfectly content just staying in the cabin. Let me also tell you that after your trail ride on the horse, you will want to soak in the hot tub the next day.

The only problem I experienced was that the bed was almost too high off the ground to get in it because I’m so short. But I still managed to get in it, and I slept so well. The shower was also amazing. There is nothing wrong that I can say about this place. I fell in love with it. Now, anytime I visit Broken Bow, any other cabins that I stay at fail to live up to my expectations after staying here. In Conclusion

Broken Bow was an amazing trip the kids and I and the best vacation we have taken. We went on this trip in 2021, and all had the best time. I only wish that we had been able to stay even longer as there are so many more activities that we didn’t get to do that would have been fun like axe throwing, escape rooms, and even racetracks. The only racetrack we saw was more go-karts for little kids. I went with teenagers, but there are also plenty of activities for little kids in the area, and people of all ages will enjoy a family trip to Broken Bow. It’s not too far from us, and I look forward to visiting again one day.

With prices rising for gas, food, and housing, you must ensure you can still feed your family.  I’m here to help you with simple tips, cashback, and reward options that are scam-free and worth it.  Keep reading to find ways to save on rising food costs and put a meal on the table without breaking the bank.

What is Inflation?

Inflation is the steady increase in the cost of goods or services over some time. You can easily understand this concept by comparing the price of a hamburger in the nineties to a hamburger today. In 1990, your hamburger would have cost around 75 cents, while today’s average cost is $5.99.  That’s a significant increase!  Even though we are making more money now than we did then, it is still a shocking example of how inflation affects prices over time.  Understanding inflation is essential when managing your finances and preparing for the future.

A few years ago, inflation was making headlines across the globe during the COVID-19 pandemic.  People were having difficulty working because so many places were shut down.  The cost of everything, including food, soared as available resources decreased.  Now that everyone is returning to work and their regular routines, the media is trying to make things seem like everything is “back to normal.”  Yet prices continue to rise in multiple industries, impacting every aspect of our daily lives.  Problems like increased demand, disruptions in imports, exports, and other supply chains, and changes in energy prices all contribute to this economic crisis.  As we struggle to provide for our families, we must do everything possible to save on food costs.

Take a Closer Look at Your Grocery Budget

You know those crumpled-up receipts that you stuff into your purse or glove compartment?  It’s time to take those out and review them. You may opt for paperless transactions and use email for receipts. Either way, you must look at them and analyze your spending habits.  I would also review any take-out receipts since you are still using that money to purchase food for yourself or your family.  Are you spending more on takeout or junk food than you thought?  Did that display aisle that caught your eye turn into a cart full of impulse purchases?  Were you hungry when you went inside of the store?

Write out a list of what you must have for each department versus what you bought in each department.  Think of it as organizing the pantry in your kitchen, but instead, it is your pantry of spending. Grab a notebook or use a budgeting app on your phone to help with the visual picture.  Every time you use your card to purchase groceries or go out to eat, write it down.  If you are getting something to drink or a pack of water bottles, write that down, too.  Next, start categorizing those expenses into lists like “Meat, Snacks, Bakery, Frozen” and so on. For example, compare lists of dairy items you have to have, like milk and butter, versus things you don’t have to have, like ice cream and flavored creamer. Find ways to cut costs by either replacing the most expensive items with a cheaper alternative. What are you spending the most money on? Are you a cookie monster or a fruit fanatic?

As for me, I have a love affair with chocolate that may as well be the plot of a bad rom-com.  From 100% pure brooding dark chocolate to sweet, peanut butter-filled milk chocolate, I’m like the main star of a chocolatey soap opera.  It is not a weakness but a chocolate conspiracy in which I am the willing accomplice.

Savvy Grocery Shopping Tips

Great, now that we understand inflation and you have a better understanding of what you splurge on, you are ready to move forward with these tips:

  • Make a List:  I cannot stress this enough.  When I make a list, I usually stick to what is on the list.  If I find myself tempted to purchase something else, I always tell myself to stick to what is on the list. I see many people walk through the store aimlessly without a list.  More than likely, you do know precisely what you need, but stores have strategically placed items and displays so that you can grab something extra on your way down the aisle. Resist the urge to grab these display items. Stick to your list.
  • Review the Weekly Ads: If your local stores send out weekly ads to you in the mail, make sure you take advantage of these money-saving opportunities.  Also, do your research and compare the prices to other retailers in your area.  Thanks to the power of the internet, this is now easier to do from home rather than going from store to store. See who has the best deals on items that you usually purchase.  Take advantage of sales that are buy one get one free, only if the price is free and not the cost it would take to purchase two of them. Our local store has different deals every week, and if you have a grocery card with them (which is free), then you get the special prices they offer.
  • Use coupons:  I am constantly looking for coupons for items that I routinely purchase. I don’t recommend going out of your way to use a coupon for an item that you wouldn’t usually purchase. This often leads to uneaten food in the cabinet because you will use something other than the item you bought.  If you are looking for coupons, visit sites like coupons.com or thekrazycouponlady.com.  Where we live, we are constrained to what options we have to purchase groceries.  If you live in an area like that, you may search your local store’s information to see if they have a website that lists sales or coupons.

  • Buy in Bulk: Purchase items that you use often in bulk.  For example, we consistently use pasta, diced tomatoes, Rotel, and rice here.  These are things that I would want to buy in bulk because I use them often.  Make sure to check the price and do the math to know that purchasing the item in bulk rather than every week or month is worth it.  For example, you can get one Chicken Pot Pie for $2.98 or 8 chicken pot pies for $14.98, making them only $1.87 each.  Doing your math on bulk items is essential to ensure you get the best price possible.
  • Avoid Shopping Hungry:  We’ve all been shopping at the grocery store when hungry.  I make it a point to eat before I leave so I am not hungry when I arrive, but sometimes I don’t have the time.  Grabbing everything you see is much easier when you have a rumbly stomach, and all the food looks good.  It’s also easier to grab unhealthy junk food and display items when you are hungry and in a hurry to get home and eat. Try to make sure to eat before you go to the store, or you will end up with a cart full of food you never intended to purchase.
  • Take Advantage of Cash Back and Points Programs: I know it is a pain to scan every receipt you get or use an app to shop with, but if you want to save money, I highly recommend using these reward programs. Some are offered by your local store independently, and others are more globally known.  I use FetchRewards and know other people who use Ibotta to save on groceries. I wouldn’t go out of my way to purchase items you get cashback and higher points on. But, if you usually purchase something and get rewarded for that, take advantage of it. Use your points on yourself or to get more groceries.

Budget-Friendly Cooking

More families are dining out or eating fast food today than ever before.  Parents are super busy and overwhelmed with work, kids, and life in general.

What most people like about fast food or eating out is that it is convenient in more ways than one. You don’t have to cook or clean up dishes; you can choose what you want to eat.  However, eating out is now costing more than it used to.  In my area, you average about $10-$15 per person eating out unless you have a coupon or know a special.  It is often cheaper to eat at home using a few ingredients than it is to go out to eat.

Ingredients
  

  • Romaine lettuce leaves
  • Canned Tuna
  • Cherry or Grape Tomatoes
  • Mayonnaise
  • Seasonings (to taste)

Instructions
 

  • Lay out your lettuce leaves on a plate.
  • Mix up your tuna how you want using your bowl and spoon. I normally mix mine up with mayonnaise and salt and pepper.
  • Spoon the tuna onto the leaves.
  • Place some tomatoes on top.
  • Roll up and enjoy!

Fried Rice With Turkey Bacon

Some years ago my family and I embarked upon a long journey from the north eastern border of Texas to the state of Oregon.  If you know anything about Texas, you know and understand that it is a very large state and crossing it takes a lot of time.  I grew up in Texas and this is nothing new to me.  I remember long trips down to South Texas for family road trips and vacations.  But those stories are for another blog post!

An old friend of mine lives in Oregon and she is the one that has inspired this recipe.  When we arrived in Oregon she had made enough for all of us to eat and everyone really enjoyed it.  I had never made fried rice before this, but now I make this recipe on a regular basis. I’m sure that we probably don’t make it the same way because my husband is picky and that limits what I can add. Every time I make it, there is never any left over and if you don’t get a serving while it’s hot, you won’t be getting one at all. I hope you enjoy this recipe as much as I do!

Feel free to add in any extras that you think would be good or even use real bacon if you prefer.

Fried Rice With Turkey Bacon

This fried rice includes turkey bacon, rice, eggs and green onion. Feel free to add in or replace ingredients.

Cook Time 30 minutes

Ingredients
  

  • 1 LB Turkey Bacon
  • Green Onions
  • 6 Eggs
  • 2 Cups Rice Whatever rice you prefer is fine.
  • 4 Tablespoons Oil Use whichever oil you prefer.

Instructions
 

  • Cook the rice early in the day and store it in the fridge. This is optional, but I find that my rice cooks better in the final stage if it's chilled.
  • Cook your turkey bacon. I like to put mine in the air fryer but you can do it in the oven or on the stove. My air fryer already has a setting for it and it doesn't usually take the full ten minutes. I would just keep an eye on it no matter how you cook it to make sure it's crispy but not burnt.
  • Chop up the bacon and set aside or store if you're prepping earlier in the day.
  • Cook the scrambled eggs and chill in the fridge. This is something I like to do, but it isn't the way this is usually done. If you have a preference on this step, please do it the way you want.
  • If you are prepping, go ahead and chop up the green onions and store them until you are ready to cook.
  • Heat the Pan: Heat a large skillet or wok over medium-high heat. Add the oil.
  • Add Turkey Bacon: Add your cooked turkey bacon to the pan and heat it up for 2-3 minutes, mixing or turning it to heat it through.
  • Add the Rice: Move the turkey bacon to one side and add the cooked and chilled rice to the pan. Break up any clumps of rice using a spatula.
  • Mix the rice and turkey bacon together in the pan. Add in the scrambled eggs and mix all together to heat through.
  • Mix in your soy sauce or another type of sauce if you prefer and top with chopped green onions. Remove from heat and serve.
